3/4 cup butter
1 1/2 cups packed brown sugar
2 tablespoons water
2 cups semi sweet chocolate chips
2 eggs
2 1/2 cups all-purpose flour
1 1/4 teaspoon baking soda
1/2 teaspoon salt
1 bag Andes creme de menthe baking chips

Cooking Instructions:

1. In a large pan over low heat, cook butter, sugar and water until butter is melted.

2. Add chocolate chips and stir until partially melted. Remove from heat and stir until chocolate is completely melted.

3. Pour mixture into a large bowl and let stand for 10 minutes to cool.

4. At high speed, beat eggs (one at a time) into chocolate mixture. Reduce speed to low and add flour, baking soda and salt.

5. Once mixture is well-blended, add Andes baking chips and hand mix until well incorporated.

6. Chill dough for 1 hour. Pre-heat oven to 350 degrees.

7. Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 10 - 15 minutes. Makes about 40 cookies.
