1 small zucchini 1 small carrot, 1/2 c mushrooms
1 summer squash
4 slices bacon (can be optional for vegetarians)
1 red bell pepper
1 small onion(can use shallots if preferred)
1 clove fresh garlic
1 small tomato Diced
1 Tbs fresh or dried parsley
2 tbs olive oil
cut bacon into small pieces and fry until cooked.Drain all grease slice squash,carrots and bell pepper thin. Dice onion. Mince garlic, and parsley if fresh. In a large saute or frying pan add oil and heat (gently do not let it smoke ,medium heat only). starting with carrots add ingredients as follows stirring frequently. bacon,squash,garlic, onion,parsley,mushrooms[Keep Stirring],when all other vegetables are almost to desired texture (should be just cooked not mushy) add tomatoes until just warmed salt to taste and serve. (great as a meal or side dish )
