1 Tbsp Butter, melted
1/2 cup Onions, chopped
1/4 cup Butter, melted
1/4 cup Flour
2 cups Half and Half or Milk
2 cups Chicken Broth
1/2 lb. Finely Chopped Broccoli
1 cup Carrots, julienned
8 ounces Grated Cheddar Cheese
Salt and Pepper to taste
1. Saute onion in 1 Tbsp of butter. Set aside.
2. Using a whisk, combine 1/4 cup of melted butter and flour in a large pot. Cook, stirring frequently over medium heat for 4 minutes. Add Half and Half and stir.
3. Add the chicken stock. Simmer for 20 minutes.
4. Add the broccoli, carrots, and onions. Cook over low heat for 20-25 minutes.
5. Add cheddar cheese-stir until melted.
6. Add salt and pepper to taste.
7. Serve and Enjoy! Great served with a crusty loaf of bread.
