2 cups Flour
1 cup Quick-Cooking Oats
1 cup Brown Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Nutmeg
1 tsp Cinnamon
1 1/2 cup Mashed Bananas
2 Eggs
1/3 cup Butter, melted
1 tsp Vanilla
1. Preheat oven to 375 degrees. In a bowl, stir together flour, oatmeal, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
2. In a separate bowl, combine the mashed bananas, eggs, vanilla, and butter.
3. Add the banana mixture in the flour mixture. Stir until the dry ingredients are moistened.
4. Spoon batter into greased muffin cups. Bake for 15 to 18 minutes or until a toothpick inserted into a center of muffin comes out clean. Cool before eating.
