3# chuck roast
5 potatoes (cut into chunks)
1 onion (cut into chunks)
4 carrots (cut into chunks)
2 cups beef stock or broth
2 cups water
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Italian seasoning
1/4 tsp salt to taste
1/4 tsp to pepper to taste
1. Cut all of the potatoes and onions into large chunks. Using large chunks makes sure they don't turn to mush in the slow cooker.
2. Add the roast to the crock pot, then the potatoes and onions and carrots.
3. Add the seasonings over the top.
4. Add the beef stock. The roast should be covered in liquid so add water until it is covered.
5. Cook in slow cooker on high for about 5 hours or low for about 10 hours. Cooking times vary.
6. You will know the meat is done when you put a fork in it and it falls apart.
7. Once it is done, remove all the vegetables and roast from the crockpot and place on a serving platter.
8. You can use the juice from the crockpot to make a gravy by putting the juice in a pot on the stove and whisking flour to your desired texture.
