1 large green onion, diced
1 large green bell pepper, diced
1 lb Andoullie or Smoked Polish sausage, cut into 1/4" slices
1 tablespoon olive oil
4 cups chopped, cooked chicken
3 cups uncooked long-grain rice
2 -10 1/2 ounces cans French onion soup, undiluted
2 to 3 teaspoon Creole seasoning
2 to 3 teaspoon hot sauce
2-14 1/2 ounce can beef broth
1. Saute first 3 ingredients in hot oil in a oven tested pan for 4 to 5 minutes or until sausage is browned. Stir in chicken and next 6 ingredients.
2. Bake covered at 350 degrees for 40 minutes. Stir after 30 minutes.
