Ingredients

1 cup all purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
2 teaspoon pumpkin pie spice
1/2 cup pumpkin puree
1/4 cup milk
1/3 cup vegetable oil
1 teaspoon vanilla
Topping:
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup pecans chopped
1 1/2 cups Very Hot Water

Cooking Instructions

1. Line a crockpot with parchment paper and turn it on high to heat up while you mix.
2. In a medium bowl mix your dry ingredients; flour, baking powder, salt, sugar and spices. Set aside.
3. In a smaller bowl mix pumpkin, milk, oil and vanilla.
4. Pour your wet ingredients into your dry ingredients and mix until a thick batter is formed.
5. Spread the batter into the parchment lined crockpot.
6. In a separate bowl mix sugars and pecans for topping.
7. Finally pour the Very Hot Water over the entire thing. Do Not Stir. Just pour water and cover with the lid.
8. Cook on high for 1 1/2 to 2 hours. Just until the middle is set.
9. Turn off crockpot and serve with ice cream.
